Clean Cranberry Bread Recipe

Super moist cranberry bread. You don’t have to sacrifice sweets in order to stay healthy. This guilt free recipe will show you how.

INGREDIENTS

  • 2 cups of Almond Flour
  • 1/2 cup of vanilla whey protein powder

  • 1/2 tbsp of cinnamon
  • 1/2 tbsp of cloves (makes all the difference trust me)
  • 1/4 cup of stevia
  • 1 tsp of Baking Soda
  • 3 Egg Whites
  • 1/4 Applesauce
  • 2 tbsp of Preservative-Free Organic Honey
  • 3/4 cup of cranberries
  • 1/4 cup of walnuts (optional or can substitute for any other nuts of your choice)
  • 1 egg

Directions:

  1. In a larger mixing bowl, mix together the first 6 dry ingredients.
  2. In a smaller bowl mix together egg whites, applesauce, and honey
  3. Add the contents of the smaller mixing bowl to the larger
  4. Fold the cranberries and walnuts into the dough*
  5. In a small bowl separate the yolk from the egg white
  6. Use the yolk and 2 tbsp of water to use as a wash. This will give the bread a pretty gold crust.
  7. Sprinkle some extra stevia on top (optional)
  8. Bake at 320 degrees F (160 C) in a non-stick loaf pan
  9. Bake for about 35 minutes or until it bread appears golden and a knife comes out clean when poked.

Note: To make soft and fluffy bread, be care not to over-knead
