INGREDIENTS
- 2 cups of Almond Flour
- 1/2 cup of vanilla whey protein powder

- 1/2 tbsp of cinnamon
- 1/2 tbsp of cloves (makes all the difference trust me)
- 1/4 cup of stevia
- 1 tsp of Baking Soda
- 3 Egg Whites
- 1/4 Applesauce
- 2 tbsp of Preservative-Free Organic Honey
- 3/4 cup of cranberries
- 1/4 cup of walnuts (optional or can substitute for any other nuts of your choice)
- 1 egg
Directions:
- In a larger mixing bowl, mix together the first 6 dry ingredients.
- In a smaller bowl mix together egg whites, applesauce, and honey
- Add the contents of the smaller mixing bowl to the larger
- Fold the cranberries and walnuts into the dough*
- In a small bowl separate the yolk from the egg white
- Use the yolk and 2 tbsp of water to use as a wash. This will give the bread a pretty gold crust.
- Sprinkle some extra stevia on top (optional)
- Bake at 320 degrees F (160 C) in a non-stick loaf pan
- Bake for about 35 minutes or until it bread appears golden and a knife comes out clean when poked.
Note: To make soft and fluffy bread, be care not to over-knead
